Common problems
Commercial Cooktop Problems We Fix
-
Pilot keeps going out
Likely cause: On a busy line, grease and crumbs often block the pilot opening. A worn safety sensor beside the pilot can also shut the gas off after a few minutes.
-
Griddle has cold spots
Likely cause: A plate that browns on one side and not the other usually has a burner or element under that zone that is not working. A thermostat that has drifted can cause the same thing.
-
Griddle overheats and smokes
Likely cause: When a plate runs far hotter than the dial says, the thermostat or its sensing bulb has often failed. It can scorch food and burn off the seasoning during a rush.
-
Burner flame is uneven
Likely cause: Boil-overs from large pots can clog the burner ports over time. Air shutters knocked out of place during cleaning can also give a lazy, yellow flame.
-
Knob or valve is stiff
Likely cause: Valves on a commercial line are turned hundreds of times a week and the grease inside them can dry out. A valve that sticks may not shut off fully, so it should be looked at soon.
-
Induction unit shuts off
Likely cause: Induction hobs often cut out when the cooling fan or its air filter is choked with kitchen grease. A failed board or a damaged coil can do it too.
What we work on
Commercial Cooktop Types We Repair
These units sit on a counter, a stand or a chef base, and each one makes heat in a different way, so the fault finding is different for each.
- Countertop gas hot plates
- Flat-top griddles, gas and electric
- Charbroilers and grooved griddles
- Drop-in and countertop induction units
- Stock pot burners
- Electric French tops and solid plates
Our process
How a Commercial Visit Works
-
Questions before we come
We ask when your kitchen opens and closes, where the unit sits on the line, and whether it runs on natural gas, propane or electric. That lets us plan a visit that stays out of the way of service.
-
Checking each burner and zone
The technician runs every burner, plate section or induction zone and checks the flame, the heat and the controls. Staff notes about when the fault shows up are a big help here.
-
You hear the cost first
We explain what failed and what the repair will cost before any work begins. You decide whether to go ahead.
-
Fix it and run it hot
After the repair, the unit is brought up to cooking heat and held there, the way it runs during a shift. We show your cook or manager that it is working before we pack up.

Questions
Commercial Cooktop Repair Questions
What should staff do if they smell gas near the line?
Clear everyone out of the area. Do not touch light switches, equipment switches or anything with a flame. Call the gas utility or 911 from outside the building, and call us for the repair once the area has been made safe.
Can you work on the unit while the rest of the kitchen stays open?
Often, yes. It depends on where the unit sits and whether the gas or power to that section can be shut off on its own. Tell us your layout when you call and we will plan around it.
Do you repair propane units on food trucks and at catering sites?
We work on propane hot plates and griddles as well as natural gas ones. Let us know the fuel type and where the unit is, since a truck or an outdoor setup changes how we get to it.
What should we tell you when we call?
The kind of unit, the fuel, and what your cooks have noticed, such as which burner fails and whether it happens all day or only when the line is busy. A photo of the data plate sent to Optimalappliance.company@gmail.com helps us bring the right parts.

I am very pleased with this company’s performance and their tech, Isa, was very kind and respectful. He was knowledgeable and very quick to get started and courteous with his work. He cleaned up everything after, I couldn’t even tell that he moved the washer. The machine is fixed and working perfectly. Thank you so much!

Taghi was so very helpful to my family! Our washing machine was full of water and I tried everything I could think of, but I could not get the water to drain. Taghi was at my house in less than two hours. He found the problem right away, made the repairs, and cleaned everything up. All of this was on a Saturday! I am so very thankful! I promptly put Optimal Appliance Repair’s number in my phone for my next appliance emergency!
