Common problems
Commercial Range Problems We Fix
-
Oven will not hold temperature
Likely cause: An oven base that runs hot or cold usually has a thermostat that is out of calibration or failing. A door that no longer seals after years of being kicked shut can also let the heat out.
-
Oven pilot will not stay lit
Likely cause: The safety valve needs a signal from a sensor in the pilot flame to stay open. That sensor often wears out, and a weak or dirty pilot can cause the same drop-out.
-
Top burners slow to light
Likely cause: Each open burner lights from a small pilot next to it. Spilled sauce and grease can block those pilots or the lighter ports on the burner head.
-
Oven door sags or drops
Likely cause: Door hinges and springs take a beating in a working kitchen. A door that falls open or will not close flat can usually be fixed with new hinge parts.
-
Convection fan not turning
Likely cause: In a convection base, the fan motor sits in a very hot spot and can seize or burn out. The door switch that tells the fan to run is another common failure.
-
Knobs spin or break off
Likely cause: Cracked knobs are often the visible sign of a valve stem that is stiff or bent. Left alone, cooks may not be able to tell if a burner is fully off.
What we work on
Commercial Range Types We Repair
A commercial range pairs open burners or a griddle on top with one or two ovens below, so a single unit can have several separate faults at once.
- Six-burner and ten-burner restaurant ranges
- Ranges with a standard oven base
- Ranges with a convection oven base
- Griddle and burner combination ranges
- Heavy-duty modular ranges
- Electric commercial ranges
Our process
How a Commercial Visit Works
-
Before the visit
We ask for your opening hours and where the range sits, such as against a wall, under a hood or in the middle of a line with units on each side. We also ask if it is on casters with a flexible gas hose, since that affects how we pull it out.
-
Top and oven are tested apart
The technician checks the burners and griddle on top, then the oven below, since they have their own valves and controls. This shows whether you have one fault or more than one.
-
Your go-ahead
You get the findings in plain words along with the cost of the repair before work starts. Nothing is replaced until you approve it.
-
Repair, then a full heat-up
Once the parts are in, every burner is lit and the oven is run up to a set temperature and checked with a separate thermometer. The range goes back in its place and is left ready for your next service.

Questions
Commercial Range Repair Questions
A cook says they smell gas at the range. What now?
Get staff and guests away from the area. Do not flip switches, light anything or try to find the leak. Go outside, call the gas utility or 911 from there, and call us about the repair after the building is safe.
Can the burners be used if only the oven is down?
It depends on the fault. Some oven problems do not affect the top at all, and others mean the whole range should stay off until it is checked. Tell us what you see and we will give you a clear answer.
Do we need to empty and clean the range before you arrive?
Please take pans off the top and out of the oven and let the unit cool if you can. A wipe-down of loose grease helps, but there is no need for a deep clean.
Can you come when the kitchen is closed?
We plan visits around your service times where we can, such as between lunch and dinner or before opening. Give us your hours when you call and we will offer a 2-hour arrival window that fits.

I am very pleased with this company’s performance and their tech, Isa, was very kind and respectful. He was knowledgeable and very quick to get started and courteous with his work. He cleaned up everything after, I couldn’t even tell that he moved the washer. The machine is fixed and working perfectly. Thank you so much!

Taghi was so very helpful to my family! Our washing machine was full of water and I tried everything I could think of, but I could not get the water to drain. Taghi was at my house in less than two hours. He found the problem right away, made the repairs, and cleaned everything up. All of this was on a Saturday! I am so very thankful! I promptly put Optimal Appliance Repair’s number in my phone for my next appliance emergency!
