Common problems
Commercial Oven Problems We Fix
-
Slow to preheat
Likely cause: An electric oven with one element out can still heat, only much more slowly. On gas ovens a weak igniter or a dirty burner often has the same effect.
-
Bakes unevenly
Likely cause: In a convection oven a fan motor that has slowed or stopped can leave hot and cold spots across the racks. A door that no longer seals lets heat spill out the front and can do the same.
-
Pilot or burner goes out
Likely cause: A thermocouple or flame sensor that has worn can shut the gas off as a safety step. Grease and crumbs near the pilot can also keep the flame from staying steady.
-
Temperature runs off
Likely cause: When food burns or comes out raw at the usual setting, the thermostat or temperature probe may be reading wrong. Controls on ovens that run from open to close tend to drift over time.
-
Combi shows a water fault
Likely cause: Combi ovens need a steady water supply and a clear drain. Scale from hard water can block the steam system or the sensors, and the oven usually stops and shows a code.
-
Conveyor belt stalls
Likely cause: A belt that jerks or stops can have a worn drive chain, a failing motor or a speed control that has quit. Baked-on debris under the belt can also make it bind.
What we work on

Each kind heats in its own way, with fans in a convection oven, stone or steel decks in a pizza oven and steam in a combi, so the first thing we ask is which one you have.

- Deck and pizza ovens
- Combi ovens
- Conveyor ovens
- Rack and bakery ovens
- Range ovens under a cooktop
Our process
How a Commercial Visit Works
-
First call
We ask your opening hours, when prep starts and where the oven sits on the line or in the bake area. We also ask whether it is gas or electric and if it is stacked on another oven.
-
Testing the oven
We heat the oven and compare the real cavity temperature with the setting. Then we check burners or elements, the fan, the door, the controls and, on a combi, the water and steam side.
-
Approval first
We walk the chef or manager through the fault and give the cost before work begins. You choose whether to go ahead.
-
Repair and bake test
With the new parts in, we bring the oven up to a working temperature and watch it cycle. We confirm it holds the set point before your crew loads it again.

Questions
Commercial Oven Repair Questions
What should the kitchen do if someone smells gas?
Clear staff and guests from the area. Do not touch switches, do not light anything and do not try to relight the oven. From outside, call the gas utility or 911, and call us for the repair after they have made it safe.
Can you come before we open or after we close?
Tell us your hours and when the oven has to be hot for prep. We will try to set a time that avoids your service period, and we will let you know what is possible when you call.
Should we keep using an oven that is running hot?
It is safer to stop and use another oven if you have one. An oven that overshoots can scorch product and may point to a control that is no longer shutting the heat off as it should.
Does the oven have to be cool when you arrive?
For most repairs, yes, since we work inside the cavity and around the burners or elements. If you can turn it off ahead of the visit, the job goes faster. We will tell you how long before when we book.

I am very pleased with this company’s performance and their tech, Isa, was very kind and respectful. He was knowledgeable and very quick to get started and courteous with his work. He cleaned up everything after, I couldn’t even tell that he moved the washer. The machine is fixed and working perfectly. Thank you so much!

Taghi was so very helpful to my family! Our washing machine was full of water and I tried everything I could think of, but I could not get the water to drain. Taghi was at my house in less than two hours. He found the problem right away, made the repairs, and cleaned everything up. All of this was on a Saturday! I am so very thankful! I promptly put Optimal Appliance Repair’s number in my phone for my next appliance emergency!
